6 to 8 sweet, firm apples (such as Golden Delicious, Idared, Cortland,
or
combination)
peeled, cored and sliced
1/3 cup granulated sugar, or to taste
Heavy cream for serving (optional)
Preheat oven to 350 degrees F.
Place the apples in a 1 quart soufflé dish or casserole and
cover with foil. Bake for 30 minutes, or until the apples have puffed
up and are tender.
Remove
from the oven and crush and whisk the apples until smooth. Whisk
in the sugar to taste.
Serve
warm with heavy cream or as an accompaniment to gingerbread cake
or meat dishes. Makes about 3 1/2 cups.
Note:
For a colorful addition, stir in a handful of cooked cranberries.
